Crispy Chickpea and Avocado Sliders

- limejuice of 1

- cilantro2 tbsp chopped
- mini whole wheat buns8
- red onion1 small sliced
- arugula1 cup
Instructions
- Preparation of Chickpeas: Preheat your oven to 400°F (200°C). Drain and rinse chickpeas, then pat dry. Toss the chickpeas with olive oil, smoked paprika, cumin, and a pinch of salt and pepper. Spread them on a baking sheet and roast for 20-25 minutes until crispy.
- Avocado Spread: While the chickpeas are roasting, mash the avocados in a bowl. Add lime juice, minced garlic, and chopped cilantro. Mix well until combined and creamy.
- Assemble the Sliders: Take your mini whole wheat buns, spread a generous layer of the avocado mix on the bottom halves, top with a layer of roasted chickpeas, and add sliced red onion and a few arugula leaves. Cover with the top halves of the buns.
- Serve: Serve immediately or keep cool until ready to serve.
