Ingredients

  • chickpeas1 can (15 oz)
  • olive oil1 tbsp
  • smoked paprika1 tsp
  • ground cumin1 tsp
  • avocados2 large
  • limejuice of 1
  • garlic clove1 minced
  • cilantro2 tbsp chopped
  • mini whole wheat buns8
  • red onion1 small sliced
  • arugula1 cup

Instructions

  1. Preparation of Chickpeas: Preheat your oven to 400°F (200°C). Drain and rinse chickpeas, then pat dry. Toss the chickpeas with olive oil, smoked paprika, cumin, and a pinch of salt and pepper. Spread them on a baking sheet and roast for 20-25 minutes until crispy.
  2. Avocado Spread: While the chickpeas are roasting, mash the avocados in a bowl. Add lime juice, minced garlic, and chopped cilantro. Mix well until combined and creamy.
  3. Assemble the Sliders: Take your mini whole wheat buns, spread a generous layer of the avocado mix on the bottom halves, top with a layer of roasted chickpeas, and add sliced red onion and a few arugula leaves. Cover with the top halves of the buns.
  4. Serve: Serve immediately or keep cool until ready to serve.
