Pan-Seared Garlic Butter Steak
Ingredients

- Ribeye or Sirloin Steaks2 boneless
- Olive oil2 tbsp
- Unsalted butter2 tbsp
- Garlic, smashed3-4 cloves
- Fresh Rosemary or Thyme2 sprigs
Instructions
- Prepare the Steaks: Pat steaks dry with paper towels. Season generously on both sides with salt and pepper. Let them sit at room temperature for about 20 minutes.
- Heat the Pan: Place a heavy skillet (preferably cast iron) over medium-high heat. Add olive oil and heat until shimmering hot.
- Sear the Steaks: Add the steaks and sear without moving them for 2–3 minutes per side, until a deep brown crust forms. Flip and repeat on the other side.
- Add the Flavor: Reduce heat to medium. Add butter, smashed garlic, and rosemary/thyme to the pan. As the butter melts, tilt the pan and spoon the melted butter over the steaks continuously for 1–2 minutes.
- Cook to your preferred doneness: Rare: 120°F (about 5 minutes total)
Medium-rare: 130°F (about 6–7 minutes total)
Medium: 140°F (about 8 minutes total)
- Rest and Serve: Transfer steaks to a plate and let rest for 5–10 minutes before slicing.
Drizzle with the garlic butter from the pan and serve immediately.
