Zesty Quinoa & Black Bean Burger
Ingredients
- quinoa1/2 cup

- red bell pepper1/2 cup

- cumin1 teaspoon

- whole grain buns4
- avocado1 sliced

Instructions
- Prepare Quinoa: Rinse 1/2 cup of quinoa under cold water, then cook it in a saucepan with 1 cup of water. Bring to a boil, then cover and simmer for 15 minutes or until water is absorbed and quinoa is tender.
- Mash Beans: In a large bowl, mash 1 can of black beans until mostly smooth.
- Mix Ingredients: To the mashed beans, add cooked quinoa, 1/2 cup finely chopped red bell pepper, 1/4 cup finely chopped onion, 1 minced garlic clove, 1/4 cup chopped cilantro, 1 teaspoon cumin, and salt and pepper to taste. Stir until well combined.
- Form Patties: Divide the mixture into 4 equal parts and form into patties.
- Cook Patties: Heat a non-stick skillet over medium heat and cook the patties for about 5 minutes on each side or until crispy and heated through.
- Assemble Burger: Serve each patty on a toasted whole grain bun with sliced avocado, lettuce, and a dollop of Greek yogurt.
