Instructions

  1. Prep the Ingredients: Rinse 1 cup of quinoa under cold water until the water runs clear. Peel and devein 20 medium shrimp. Zest and juice 2 limes. Chop 1 avocado and slice 1 red bell pepper into thin strips.
  2. Cook Quinoa: In a medium saucepan, combine the rinsed quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed and the quinoa is fluffy.
  3. Marinate Shrimp: In a bowl, mix shrimp with half of the lime zest, half of the lime juice, 1 tablespoon of olive oil, and a pinch of chili flakes. Let marinate for 10 minutes.
  4. Cook Shrimp: Heat a skillet over medium-high heat. Add marinated shrimp and cook for 2-3 minutes per side or until pink and slightly charred.
  5. Assemble the Bowl: Divide cooked quinoa among four bowls. Top each bowl with cooked shrimp, avocado, red bell pepper, and fresh cilantro. Drizzle with the remaining lime juice and sprinkle with the rest of the lime zest.
